These dairy-free pancakes are light, fluffy, and perfect for anyone avoiding dairy. Milk replacer works as a great substitute for regular milk, keeping the texture soft and delicious!
📝Ingredients:
1 cup All-purpose flour (or whole wheat flour)
1 tbsp Sugar or sweetener of choice
1 tsp Baking powder
½ tsp Baking soda
¼ tsp Salt
1 cup Milk replacer
1 Egg (or flaxseed egg for vegan option)
1 tbsp Vegetable oil or melted coconut oil
½ tsp Vanilla extract (optional)
👨🍳Instructions:
Mix Dry Ingredients:
In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
Combine Wet Ingredients:
In another bowl, mix milk replacer, egg, oil, and vanilla extract until smooth.
Make the Batter:
Slowly pour the wet mixture into the dry ingredients.
Stir gently until just combined (don’t overmix; a few lumps are okay).
Cook the Pancakes:
Heat a non-stick pan over medium heat and lightly grease it.
Pour ¼ cup of batter onto the pan for each pancake.
Cook until bubbles appear on the surface, then flip and cook for another 1-2 minutes.
