These dairy-free pancakes are light, fluffy, and perfect for anyone avoiding dairy. Milk replacer works as a great substitute for regular milk, keeping the texture soft and delicious!

📝Ingredients:

  • 1 cup All-purpose flour (or whole wheat flour)

  • 1 tbsp Sugar or sweetener of choice

  • 1 tsp Baking powder

  • ½ tsp Baking soda

  • ¼ tsp Salt

  • 1 cup Milk replacer

  • 1 Egg (or flaxseed egg for vegan option)

  • 1 tbsp Vegetable oil or melted coconut oil

  • ½ tsp Vanilla extract (optional)

👨‍🍳Instructions:

  1. Mix Dry Ingredients:

    • In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

  2. Combine Wet Ingredients:

    • In another bowl, mix milk replacer, egg, oil, and vanilla extract until smooth.

  3. Make the Batter:

    • Slowly pour the wet mixture into the dry ingredients.

    • Stir gently until just combined (don’t overmix; a few lumps are okay).

  4. Cook the Pancakes:

    • Heat a non-stick pan over medium heat and lightly grease it.

    • Pour ¼ cup of batter onto the pan for each pancake.

    • Cook until bubbles appear on the surface, then flip and cook for another 1-2 minutes.

  5. Serve & Enjoy:

    • Stack the pancakes and drizzle with maple syrup, honey, or fresh fruits! 🍯🍓
