This homemade dairy-free ice cream is smooth, creamy, and perfect for those who want a rich dessert without using milk or cream. Non-dairy creamer helps achieve the perfect texture, making it a delicious frozen treat!

📝Ingredients:

  • 2 cups Non-dairy creamer

  • ½ cup Coconut milk or almond milk (for extra creaminess)

  • ½ cup Sugar or sweetener of choice

  • 1 tsp Vanilla extract (for classic flavor)

  • ½ tsp Xanthan gum (optional, for a smoother texture)

  • 1 tbsp Cornstarch (for thickening)

  • ½ cup Chopped chocolate, fruit, or nuts (optional)

👨‍🍳Instructions:

  1. Heat the Base:

    • In a saucepan over medium heat, whisk together non-dairy creamer, coconut milk, sugar, xanthan gum, and cornstarch.

    • Stir continuously until the mixture thickens slightly (do not boil).

  2. Add Flavoring:

    • Remove from heat and stir in vanilla extract (or any other flavor like chocolate or strawberry).

  3. Cool the Mixture:

    • Let the mixture cool to room temperature, then refrigerate for at least 2 hours (or overnight for best results).

  4. Churn the Ice Cream:

    • If using an ice cream maker, churn according to the manufacturer’s instructions.

    • If you don’t have an ice cream maker, pour into a container and freeze, stirring every 30 minutes for the first 3 hours to prevent ice crystals.

  5. Add Mix-Ins & Freeze:

    • Once it reaches a soft-serve consistency, fold in chocolate chips, fruit, or nuts if desired.

    • Freeze for another 2-3 hours until firm.

  6. Serve & Enjoy!

    • Scoop and enjoy your homemade dairy-free ice cream! 🍦✨
