This homemade dairy-free ice cream is smooth, creamy, and perfect for those who want a rich dessert without using milk or cream. Non-dairy creamer helps achieve the perfect texture, making it a delicious frozen treat!
📝Ingredients:
2 cups Non-dairy creamer
½ cup Coconut milk or almond milk (for extra creaminess)
½ cup Sugar or sweetener of choice
1 tsp Vanilla extract (for classic flavor)
½ tsp Xanthan gum (optional, for a smoother texture)
1 tbsp Cornstarch (for thickening)
½ cup Chopped chocolate, fruit, or nuts (optional)
👨🍳Instructions:
Heat the Base:
In a saucepan over medium heat, whisk together non-dairy creamer, coconut milk, sugar, xanthan gum, and cornstarch.
Stir continuously until the mixture thickens slightly (do not boil).
Add Flavoring:
Remove from heat and stir in vanilla extract (or any other flavor like chocolate or strawberry).
Cool the Mixture:
Let the mixture cool to room temperature, then refrigerate for at least 2 hours (or overnight for best results).
Churn the Ice Cream:
If using an ice cream maker, churn according to the manufacturer’s instructions.
If you don’t have an ice cream maker, pour into a container and freeze, stirring every 30 minutes for the first 3 hours to prevent ice crystals.
Add Mix-Ins & Freeze:
Once it reaches a soft-serve consistency, fold in chocolate chips, fruit, or nuts if desired.
Freeze for another 2-3 hours until firm.
