Sugar-Free Chocolate Pudding (Using Xanthan Gum) 🍫

This Sugar-Free Chocolate Pudding is thick, creamy, and perfect for a low-carb or keto-friendly dessert. Xanthan gum helps create a smooth and velvety texture without the need for cornstarch or flour.


📝Ingredients:

  • 2 cups Almond milk (or any milk of choice)

  • ¼ cup Unsweetened cocoa powder

  • ⅓ cup Erythritol or other sugar-free sweetener

  • ½ tsp Xanthan gum

  • ¼ tsp Salt

  • ½ tsp Vanilla extract

  • ¼ cup Heavy cream (optional for extra richness)

  • Dark chocolate shavings for topping (optional)


👨‍🍳Instructions:

  1. Heat the Milk:

    • In a saucepan over medium heat, warm the almond milk (do not boil).

  2. Mix Dry Ingredients:

    • In a small bowl, whisk together cocoa powder, erythritol, xanthan gum, and salt.

  3. Combine & Thicken:

    • Gradually whisk the dry ingredients into the warm milk.

    • Stir continuously for 3-5 minutes until the mixture thickens.

  4. Add Flavor:

    • Remove from heat and stir in vanilla extract and heavy cream (if using).

  5. Cool & Serve:

    • Pour the pudding into serving cups and refrigerate for 1-2 hours until fully set.

    • Garnish with dark chocolate shavings or whipped cream.
