Sugar-Free Chocolate Pudding (Using Xanthan Gum) 🍫

This Sugar-Free Chocolate Pudding is thick, creamy, and perfect for a low-carb or keto-friendly dessert. Xanthan gum helps create a smooth and velvety texture without the need for cornstarch or flour.
📝Ingredients:
2 cups Almond milk (or any milk of choice)
¼ cup Unsweetened cocoa powder
⅓ cup Erythritol or other sugar-free sweetener
½ tsp Xanthan gum
¼ tsp Salt
½ tsp Vanilla extract
¼ cup Heavy cream (optional for extra richness)
Dark chocolate shavings for topping (optional)
👨🍳Instructions:
Heat the Milk:
In a saucepan over medium heat, warm the almond milk (do not boil).
Mix Dry Ingredients:
In a small bowl, whisk together cocoa powder, erythritol, xanthan gum, and salt.
Combine & Thicken:
Gradually whisk the dry ingredients into the warm milk.
Stir continuously for 3-5 minutes until the mixture thickens.
Add Flavor:
Remove from heat and stir in vanilla extract and heavy cream (if using).
Cool & Serve:
Pour the pudding into serving cups and refrigerate for 1-2 hours until fully set.
Garnish with dark chocolate shavings or whipped cream.
