1 tbsp agar-agar powder
2 tbsp honey or sugar (adjust to taste)

½ tsp vanilla extract (optional)

In a saucepan, mix the fruit juice and agar-agar powder. Let it sit for 5 minutes to hydrate.
Heat the mixture over medium heat, stirring continuously until the agar-agar dissolves completely (about 5 minutes).
Add honey or sugar, stirring until fully dissolved.
Remove from heat and mix in lemon juice and vanilla extract.
Pour the mixture into silicone molds or a tray. Add chopped fruits for extra texture.
Let it cool at room temperature for 15 minutes, then refrigerate for 1 hour until fully set.
