šŸ“Ingredients:

  • 2 ripe bananasĀ (mashed)

  • 1 ½ cups oat flourĀ (or blended oats)

  • 1 tbsp inulin powderĀ (for added fiber & gut health)

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp cinnamon powder

  • ¼ tsp salt

  • 1 eggĀ (or flax egg for vegan option)

  • ¼ cup honey or maple syrup

  • ½ cup milkĀ (dairy or plant-based)

  • 1 tsp vanilla extract

  • 2 tbsp olive oil or melted coconut oil

  1. Preheat & Prepare:

    • Preheat oven to 180°C (350°F).

    • Line a muffin tray with paper liners or grease lightly.

  2. Mix Dry Ingredients:

    • In a bowl, whisk together oat flour, inulin powder, baking powder, baking soda, cinnamon, and salt.

  3. Prepare Wet Ingredients:

    • In another bowl, mash the bananas and mix with egg, honey, milk, vanilla extract, and oil.

  4. Combine & Mix:

    • Gradually add the dry ingredientsĀ into the wet mixture.

    • Stir until just combined (don’t overmix!).

  5. Bake the Muffins:

    • Divide the batter into the muffin tray.

    • Bake for 18-22 minutes, or until a toothpick inserted comes out clean.

  6. Cool & Serve:

    • Let the muffins cool for 5 minutes before removing from the tray.
