Banana Oat Muffins šš§

šIngredients:
2 ripe bananasĀ (mashed)
1 ½ cups oat flour (or blended oats)
1 tbsp inulin powderĀ (for added fiber & gut health)
1 tsp baking powder
½ tsp baking soda
½ tsp cinnamon powder
¼ tsp salt
1 eggĀ (or flax egg for vegan option)
¼ cup honey or maple syrup
½ cup milk (dairy or plant-based)
1 tsp vanilla extract
2 tbsp olive oil or melted coconut oil
šØāš³Instructions:
Preheat & Prepare:
Preheat oven to 180°C (350°F).
Line a muffin tray with paper liners or grease lightly.
Mix Dry Ingredients:
In a bowl, whisk together oat flour, inulin powder, baking powder, baking soda, cinnamon, and salt.
Prepare Wet Ingredients:
In another bowl, mash the bananas and mix with egg, honey, milk, vanilla extract, and oil.
Combine & Mix:
Gradually add the dry ingredientsĀ into the wet mixture.
Stir until just combined (donāt overmix!).
Bake the Muffins:
Divide the batter into the muffin tray.
Bake for 18-22 minutes, or until a toothpick inserted comes out clean.
Cool & Serve:
Let the muffins cool for 5 minutes before removing from the tray.
